|Ingredients:||2 Tbsp olive oil
1 tsp crushed garlic
1 c arborio rice
1/4 c dry vermouth
~2.5 c water, divided
1 dried morel, chopped
1/4 c grated mizithra cheese
|Preparation:||Saute garlic in oil, add rice & stir to coat all the grains.
Add vermouth, and simmer till liquid is absorbed; add 1 c of the water and the morel bits, simmer stirring occasionally until the water is absorbed. Add another cup of water and do ditto, until the rice is tender. Stir in the cheese and eat.
If you are an Evil Californian, or want to eat like her, sprinkle a little Grande Anse #5 scotch-bonnet sauce on top before devouring.
