|Ingredients:||3 zucchini, lopped into bite-sized chunks
6 small vine-ripened tomatoes
pinch of oregano
tsp dried basil (several leaves of fresh would have been infinitely better, but you use what you have)
|Preparation:||Quarter tomatoes, removing the eye.
Combine with herbs, simmer 'til tomato is tender.
Grill zuccini until colored, but still crunchy inside.
Combine with tomato sauce.
Keep warm until serving.
