almond meal breading:
~3/4 c almond meal
~1/2 tsp garlic powder
~1/2 tsp onion powder
|Preparation:||Slice peeled eggplant into 1/2" thick slabs.
Whip 1 egg (we use imitation egg beaters from Costco), dip eggplant in egg and roll/cover in breading.
Fry in butter about 3-4 minutes per side.
Quick and simple. We love it, my personal favorite way to have eggplant. Almond meal is readily obtained at Trader Joe's.
