|Ingredients:||1 can artichoke hearts (not marinated!), drained (liquid reserved) and artichoke hearts quartered
1/4 c olive oil
2 tsp flour
1/8 c chopped fresh parsley
|Preparation:||Heat olive oil, add flour and stir. Add juice from the canned artichokes and parsley, chopped. (If you can't get fresh parsley, use 1 Tbsp dried parsley.)
Cook over medium heat for 5 minutes, stirring occasionally. The sauce should thicken some.
Add quartered artichoke hearts, simmer on low, covered, for 5-7 minutes.
Serve hot over pasta of your choice. Spagetti is good, also linguini.
