Ingredients:A turkey
Preparation:Basically:
Cook turkey at 500 for a half hour. (Might set off smoke alarm.)

Cover breast with foil triangle. Reduce oven to 350/375 (I forget,
check the foodnetworks web site). Stick temperature probe in breast,
set temperature alarm for 161. (The temp probe is great; you never
need to open the oven and let out heat, you always know what temp the
meat is at. The remote display also has a timer. Kitchen gadgets are
cool!)

Our turkeys usually took another 2.5 to 3 hours.

Having the probe in the breast means the breast is done perfect!
Notes:One of my favorite shows is Good Eats with Alton Brown. I dig the way
he explains the "science" behind cooking and he packs a lot of
information in a half hour show.

Anyway, we've had great success with his method.
