Ingredients:1 lb small white beans
1 to 1-1/2 lbs ham shank or hocks
1 onion
1 celery stalk
salt and pepper
2-3 qts water
Preparation:Rinse beans.
Cut up onion as you like (I julienne).
dice celery.

Throw everything into crock pot and add 2-3 quarts water.
Cover and cook 6 hours or so on low setting. I cook a little longer than most to make the beans really soft.

Season with salt and pepper.

Serve with fresh cornbread.
Notes:My crockpot version.
