Ingredients:1 can black beans
1 can salsa
1/4 c roast garlic puree (Roasted Garlic Alioli)
salt and pepper
1 chub polenta
garlic oil
1/2 onion
cilantro
oregano
Preparation:Combine beans, salsa, and garlic puree, add salt and pepper to taste, fridge until ready to serve.

Chop onion finely, chop cilantro coarsely.

Slice the polenta thin, brown lightly on both sides in garlic oil.

Serve bean salsa over polenta slices, with onion, cilantro, and oregano on the side to be added to taste.

Also goes well rolled in reheated chapatis, which being whole wheat, and
sturdier, are an excellent alternative to flour tortillas.
Notes:Serves two.

In case anybody thinks it's _always_ fun and games in the Golding kitchen. Sometimes the cook is hungry, and the motorcycle doesn't want to go shopping, so you fix what's in the cupboard:
